The Clink speaks at CEDA Conference

Chris Moore and Kane Sterling were invited to speak at the The Catering Equipment Distributors Association (CEDA) in Cirencester last month. They introduced The Clink to over 300 catering equipment suppliers and distributers and also invited them to support us with equipment for future Clinks. The message was well received and a lot of offers of help were made.

Tales from the Potting Shed

This time of year is extremely busy for the farm and garden department. The open plot area has been hand prepared and the first outdoor sowings of onions and leeks have been completed, however, the recent period of dry weather has delayed germination.
The glasshouse is now full of cabbage, cauliflower, pepper and gooseberry seedlings that are ready to either be potted or transplanted to the polytunnels.

Recycling at The Clink

In a bid to reduce the volume of waste produced, The Clink has joined forces with High Down’s recycling department. The cardboard is bailed on site and then the bails are sold directly to the mills. They also recycle all their cans and plastic bottles which are being sold by the tonne to be recycled.

The Prison Restaurant

The BBC documentary, The Prison Restaurant, made it’s debut on BBC One at 10.35pm on 26th April. This was the culmination of over 150 hours of filming over a four month period by producer/director Jamie Berry and Pete Lawrence, executive producer. It featured life in prison and followed a few Clink graduates through the trials and tribulations of their time in The Clink.

Michael Varah Memorial Fund

On 31st March The Clink hosted an event with the Michael Varah Memorial Fund, a charity which aids the rehabilitation of prisoners both before and after they have been released.

Recipe of the Month

Ingredients
 Flan Base:
An 8 inch flan case
200g sifted plain flour
125g softened butter
50g sugar
1 egg
A pinch of Salt
The Filling:
300g chocolate (minimum 70 per cent cocoa solids)
200g unsalted butter
60g caster sugar
3 eggs
3 additional egg yolks
Method
Flan Base:
Mix the eggs and the sugar until they become light and creamy.
Add the butter and mix for 30 seconds.
Gradually add the flour and a pinch of salt and mix well until smooth.
Wrap in cling-film and leave to rest in the fridge for half an hour.
