Graduate Update

One of our prisoners is starting a new job with a top city contract caterer later this month. He has left High Down and is going to work in Central London but will still be a prisoner in a category D prison for another 12 months.

Restaurant Ambassadors

We are delighted to announce the appointment of our first ambassadors. Vic Laws is to be our restaurant ambassador. Vic has over 50 years experience within the hospitality industry and regularly helps us out on a voluntary basis training the front of house prisoners in The Clink Two days a month.

New Summer Menus

Al and his team of trainee chefs have created three new delicious summer menus. The menus went live last month and include deep fried Stilton quenelles with apple, pear & walnut salad to start, followed by homemade lobster ravioli with lobster and truffle butter served with a seasonal salad and a creamy crème brûlée with summer berry compote to finish, to name just a few of the delightful dishes on offer.

Outside Catering

Last month the Clink served afternoon tea to 30 guests for the Friends of H.M.P. Grendon prison. The event was hosted by Tony and Cherie Blair at their beautiful family home.
We also catered for The Prison Reform Trust who launched their new report called “Time Well Spent”; this is a practical guide to active citizenship and volunteering in prison. Linking with Other Prison Charities

We are now displaying and selling artwork in The Clink Restaurant from the Koestler Trust.
Koestler is one of the best-known prison arts charities. They have been awarding, exhibiting and selling works of art by offenders, detainees and secure patients for 49 years. Their awards receive over 5,000 entries a year – inspiring offenders to take part in the arts, work for achievement and transform their lives.

Ms Marmite Lovers Underground Market

The Clink took part in Ms. Marmite Lovers (Kerstin Rodgers) underground market. It was held at her house in North Kilburn and the place was literally rocking! It was the first event of hers that we have attended and we were pleasantly surprised by the 25 market stalls throughout her house and garden selling everything from smoked meats, a variety of cheeses and a selection of authentic Mauritian street food.

Tales from the Potting Shed

We are thrilled to announce that The Bromley Trust have generously funded the purchase of a brand new greenhouse. The 20 x 7 metre greenhouse will be built this month and will hopefully be up and running by the middle of July.

Recipe of the Month – Balsamic Onion Relish

Ingredients
1kg peeled sliced onions – red or white
Sugar
Balsamic vinegar
Olive oil
Method
1. Gently fry the onions in the olive oil until soft and slightly caramelised.
2. Sprinkle with white sugar so that all of the onions are covered with a thin coat of sugar, mix well.
3. Pour in enough balsamic vinegar to cover the onions and cook slowly until all the vinegar has reduced to a thick consistency.
4. Allow to cool and put into a clean jar with a tight fitting lid.
