The Clink wins Diversity in Employment award

October Recipe – Cranberry Sauce

Ingredients

500g fresh or frozen cranberries
250g castor sugar
½ a fresh lemon

 
Method

Place cranberries, sugar and the juice of half a fresh lemon into a solid bottom pan and slowly bring to the boil.
Simmer for 30 minutes, frequently stirring the mixture.
Allow mixture to cool before filling sterilised glass jars.
Keep refrigerated and use within two weeks.

As the cooler weather sets in things are slowing down as far as the outside plot and polytunnels are concerned, the tomato season will soon come to an end as temperatures continue to drop, with the growth of the lettuces in the polytunnels reducing gradually too.

Antonio Carluccio’s December fundraising lunch

Our next fundraising lunch will be held on Tuesday 20th December at The Clink. Prisoners will serve non-alcoholic bucks fizz to guests on arrival, followed by a four-course Italian lunch with coffee cooked by the prisoners with the help and guidance of Antonio Carluccio.

Industry greats train prisoners at The Clink

Our recent and very successful fundraising lunch at The Clink saw prisoners working with three of the industry’s greats – the renowned Giorgio Locatelli, our chef ambassador, the respected Antonio Carluccio and the innovative Cyrus Todiwala.
