Clink Christmas Puddings

Prisoners set to work in November to create over 100 Christmas puddings in time for the festive season. Creating their own recipe, the puddings were sold to raise money for The Clink charity, retailing at just £14.95 each.

A successful year in The Clink…

This year has been incredibly successful for The Clink, not only as a restaurant but as a charity and mentoring scheme too. Starting in July when The Clink was awarded the Education and Catering Award at the Caterer & Hotelkeeper annual Catey Awards, the team have gone on to win another three awards in the last three months.

Antonio Carluccio’s fundraising lunch…

There’s still time for you to secure a place at our next fundraising lunch on Tuesday 20th December at The Clink Restaurant.
Prisoners will serve non-alcoholic bucks fizz to guests on arrival, followed by a four-course Italian lunch, with coffee, cooked by the prisoners with the help and guidance of Antonio Carluccio.

A festive recipe: Smoked salmon and avocado mousse served with dill mayonnaise

Ingredients:
2 Ripe avocados
250g sliced smoked salmon
1 Lemon
4 Table spoons of fresh mayonnaise or a good quality brand
2 Table spoons of single cream
A dash of Tabasco
Black pepper
Salt
Fresh dill
Method:
Remove the stone and skin from the avocados and cut into large chunks.
Put into a blender with the juice of the lemon, Tabasco, black pepper and pinch of salt.
Blend until smooth.
Line the inside of 4 ramekin dishes or small teacups with cling film, overlapping by 1 inch.

The Clink Charity has been invited to take part in the Big Give Christmas Challenge.
The Big Give runs the annual Christmas Challenge where you can have your donation matched; making your support for The Clink go even further.
