The Clink Canapé Cookbook is now available to buy, priced at £14.99, with all proceeds going towards developing more prisoner rehabilitation schemes across Her Majesty’s Prison Estate.

Hospitality greats, keen supporters and government officials turned out for The Clink Canapé Cookbook launch last month at Petty France in London, home to the Ministry of Justice.

The cookbook, created by prisoner rehabilitation initiative The Clink Charity, presents 100 canapé recipes carefully crafted by The Clink Restaurant founder Alberto Crisci MBE, Clink trainees and graduates, ambassadors and friends of the charity. Contributors include The Clink’s group chef ambassador and world renowned restaurateur Albert Roux OBE, Michelin star chef Angela Hartnett, Clink chef ambassadors Cyrus Todiwala OBE DL, Antonio Carluccio, Giorgio Locatelli and Wahaca co-founder Thomasina Miers.

Among the guests at the official launch event were Rt Hon Michael Gove MP, Lord Chancellor and Secretary of State for Justice and Roux, who was signing cookbooks for guests.

Prosecco produced in Italy by San Patrignano was served to guests on arrival. San Patrignano offers people who are afflicted by dependencies or social exclusion a community support network and work experience in wine production.

Clink Events – the event catering arm of the charity – served a selection of delicious hot and cold canapés that were prepared and served by graduates of The Clink training scheme and young homeless people from Centrepoint, using recipes taken directly from the cookbook. The evening’s menu featured smoked eel, beet terrine and horseradish spoons (Albert Roux), haggis scotch quail’s eggs (Michael Gove) and mini seasonal fruit tartlets (Alberto Crisci).

Chris Moore, chief executive of The Clink Charity, said, “I’d like to thank everyone for coming and celebrating another milestone in The Clink’s progress. I’d also like to thank everyone who has worked so hard on this book, right from the initial concept and recipe writing through to testing and photographing each dish. All proceeds will go directly to The Clink Charity, which I’m proud to say is now in its sixth year and has been the driving force of change for so many who are dedicated to changing their lives for the better.”

The Rt Hon Michael Gove MP added, “I was very flattered to be asked to contribute a recipe to the Clink’s cookbook. The publication highlights the excellent work done by the charity, which benefits prisoners across the estate.

“The Clink provides prisoners with an opportunity to learn new skills and take part in meaningful work. This offers them a real chance to return to the community with the ability to turn their lives around. Making education and rehabilitation the focus in prison will reduce reoffending, cut crime – and improve public safety.”

About The Clink Charity

The Clink Charity represents a genuine opportunity for change. Each prisoner who works in a Clink Restaurant studies for accredited NVQs in food preparation, food service and cleaning. Whilst working in a Clink Restaurant prisoners gain experience within an exciting, operational business and receive in-depth guidance to find full-time employment within the hospitality industry upon release.

The Clink rehabilitation concept is expanding across Her Majesty’s Prison Estate with four restaurants already in operation. With The Clink Gardens at HMP Send and HMP High Down in Surrey as well as Clink Events, the charity is on track to achieve its target of 10 prisoner training projects in operation by the end of 2017.
