Catey Award Winner

The Clink team and trustees had a fantastic evening at The Cateys awards ceremony on Tuesday 5th July. The ceremony was held at the stunning Grosvenor House Hotel on Park Lane where Al Crisci was short listed for two categories – The Education and Training Award and Public Sector Caterer Award. We are delighted to announce that Al won the Education and Training Award which was presented to him by Philippe Rossiter, chief executive of the Institute of Hospitality


Tales from the Potting Shed

The greenhouse, kindly donated to us by The Bromley Trust is now taking shape with all the foundations laid and framework being constructed. Over the next couple of weeks the rest of the structure will be completed and the windows will be fitted. Sustainability Update

Under the careful supervision of David Harding, the High Down carpentry shop has now finished constructing and assembling 10 beehives to be placed within the prison estate. The next step is to get them positioned around the grounds before getting them up and running with High Down’s own colonies of honey bees. To do this we need to purchase 10 swarms of bees. Outside Catering…

On 8th June The Clink’s outside catering team was asked to cater for an event held by The Royal College of Speech in St Anslems Church Kennington. The prisoners made 800 cold canapés from scratch in kitchens at The Clink throughout the morning which were then transported to Kennington in a refrigerated van. Afterwards six of our ex-offenders passed around a selection of canapés and drinks.


Graduate / Training Update

The 20 prisoners we currently have in training are doing really well and getting used to the new summer menus which has enabled them to learn many new skills. Last week our latest graduate was released and we have managed to find him employment with a London Restaurant.


What’s Next…

High Down will hopefully produce 24 graduates this year and in order to increase this number we will require more Clink Restaurants to train prisoners. Our five year plan is to build three more restaurants so we could potentially produce over 100 graduates a year that we will help to find work within the catering industry, an industry that in our current climate has a real qualification and skills shortage. Recipe of the Month

One Blind Baked eight inch shortcrust pastry tart case with removable base preferably. (Pre baked using baking beans or dried beans).
3/4 pint double cream
1/2 large chopped onion
4 egg yolks
Pinch of Pepper
8oz Grated Mature Cheddar
Allow the tart case to cool down.
Sweat the chopped onions in a frying pan until soft and slightly caramelised.
Mix the egg yolks with the cream and add a pinch of pepper.
Once the onions have cooled spread over the bottom of the tart case.

Clink Team Evening Out

The Clink team was invited to Buckmore Park in Kent for a charity go karting evening in aid of Changing Paths, a community interest company and charitable trust that was set up by the Wates Family to help offenders and people from our communities find sustainable employment within the construction sector.
