
Chilli chocolate rum truffles
Whether you’re having friends round for dinner or you want to cook up a sweet and indulgent treat for the family this weekend, look no further than our chilli chocolate rum truffles. Our simple recipe uses good quality dark chocolate, cream and a pinch of chilli for a hint of spice. Perfect with a cup of coffee.
Makes 50
Ingredients:
450g good-quality dark chocolate, broken up
50g unsalted butter
2 tbsp rum
Pinch of chilli powder
2 tsp single cream
For coating and decorating:
300g good-quality dark chocolate
150g white chocolate
Pinch of chilli flakes
Method:
Put the chocolate and butter in a large heatproof bowl and place over a saucepan of simmering water until all the chocolate has melted. (Be sure the bowl does not touch the water.) Add the rum, chilli and cream. Mix well, pour into a container and leave to cool completely.
Roll into balls, place on a tray and chill in the fridge until set.
Now melt the dark chocolate to coat the truffles, in the same way as before. Spear each truffle with a narrow skewer and dip into the dark chocolate, then place on a tray lined with baking parchment. Once cooled, melt the white chocolate as before, then drizzle it over the truffles with a fork to decorate. Scatter cautiously with chilli flakes. Leave to set, then serve.
